Spring Rolls

I tried to make Spring Rolls tonight.

Well... uh... at least they're edible. I think.

The prep was easy - I've got all the necessary ingrediants ready. I used shrimp, rice noodles, lettuce, shredded carrots, and bean sprouts. Prep actually takes a while, so it's probably worth it to do more than one at a time.

But once those rice paper thingies are soft they're kinda like gooey cling wrap! It's tough to get them to form a nice tightly wrapped roll without sticking to themselves or tearing.

Ah well. Practice makes perfect I guess. They still taste good. :-)

Effie Hobby - Voting since 1920

Connecticut woman still enthusiastic voter at 105

Effie Hobby, a 105 year-old Connecticut resident has voted in every election since 1920 when women were first given the right to vote. This year she voted absentee since she now lives in a nursing home. "I was always taught that (voting) was one of those things we should do. It's a privilege to vote," Hobby said Monday from her room at Wesley Village, the nursing home where she's lived for 15 years. First Lady Laura Bush called Effie to thank her for her 82-year voting streak.
