Yum. I was thinking about this last night so I tried it this morning. It
came out delicious. Here's the recipe:1 large round cheese bread from Abdulla's bakery in Houston, Texas (you
can substitute some other kind of flat cheese bread, but if you're in
Houston, you *must* have some of their bread!)
2 oz tomato sauce (use one 8oz can and save the rest for something
else)
1/4 cup shredded mozzarella
dash salt
dash black pepper
dash oregano
one spring of fresh rosemary
Lay the bread out on a metal pizza tray (the kind with the holes in it).
Pour the tomato sauce on and spread it around within one inch of the
edge. You want it very thin, with bread peeking out all over. Don't glop
it on. Spread the mozzarella around. Again, this will be skimpy coverage.
(The bread itself already has cheese in it.) Sprinkle on the salt, pepper
and oregano and tear off the leaves of the rosemary and sprinkle them
around.
You can leave it like this or add a topping. I suggest either sauteed
portablella mushrooms if you're vegetarian, or ground beef or ground lamb
if you eat meat. If you can have pork, forgo the usual pepperoni for some
thinly sliced kielbasa salami.
Bake in a 350 degree oven for about 8-10 minutes or until the cheese is
melted.
