I guess these would more commonly be known as Swedish Meatballs, but my
Finnish mother taught me how to make 'em. :-) I made a few changes to em
last night and they turned out wonderfully:1 lb ground beef
1 egg
1/4 flour
1 tablespoon herbs, minced very fine. (I used a couple of sprigs each
of oregano and thyme and one small spring of rosemary.)
1 teaspoon kosher salt
Several grinds fresh black pepper
1 shallot, chopped fine
Mix the ground beef and egg first, then blend in the flour. Add all the
rest of the ingredients and mix throughly. Form into small balls and
place in a pan LIGHTLY coated with olive oil. Cook to doneness.
For the brown gravy, I use a prepackaged mix, but add a tablespoon of heavy
cream to the final gravy. Serve with boiled red new potatoes and
lingonberry preserves.
